Quick and Easy Kale Salad
I’m definitely the type of person who does not like to spend a lot of time cooking my meals because I’m very impatient and hate waiting for my food to cook. "Quick and easy" recipes, then, are the ones I'm always looking for. This kale salad recipe is one of my favorite because it is indeed quick, easy, and most importantly, healthy! Ingredients:
3 handfuls of washed kale
3-4 small chopped carrots
3-4 chopped cherry tomatoes
2-3 small chopped bell peppers
1/4 cups of chopped onion
half of an avocado
Dressing:
2 tbsp balsamic vinegar
1 tbsp avocado oil
Directions: Start by washing your kale and veggies. This is really important because you never know what could be on those veggies, even if you buy organic (which I highly recommend doing). Add your kale and dressing to your bowl first. Mix is all up to make sure the kale is covered in the dressing. Top it off with the other veggies and avocado. DONE! Easy peasy and super yummy.
I sometimes like to add quinoa as well to make it a little more filling!
