Vegan and Gluten-Free Tacos
I have always loved Mexican food, but when I gave up meat and found out I had a minor gluten intolerance, I had to find the perfect vegan and gluten-free taco recipe for home. Now, I'm ready to share it with you!
The best tacos are full of flavor, full of veggies, and messy. I have experimented with different gluten free corn tortillas, taco "meat," vegan cheese, seasonings, and sauce, and I've finally found the perfect combination.
Ingredients:
2 (or how many you prefer) Food for Life Sprouted Corn Tortillas
1/2 of an avocado
1/4 cup chopped onions
1/4 cup chopped red peppers
1/4 cup cooked mushrooms
handful of washed kale
Directions: Start by cooking your "Beyond Meat" Meatless Beef Feisty Crumble in a skillet. Cook until crispy. While waiting for "meat" to cook, chop up onions, red peppers, mushrooms, and kale. Once your "meat" is almost cooked, throw the veggies in to cook with the "meat" for a couple minutes. Next, throw your tortillas in the oven. I like to cook mine in the oven for a couple of minutes longer than most because they get just a tad crunchy. Once the tortillas and "meat"/veggies are done, slice up some avocado. Throw "meat" and veggies on your tortillas, add avocado, and top with dressing. The messier the taco, the better. ENJOY!
